The Wood / Ember Side (Charcoal & Grill)

• The Ember Maker: This is the heart of the traditional side. You pack it with wood or charcoal and fire lighters. As the wood burns, hot, ready-to-cook coals continuously fall through the grate to the tray below.
• Cooking Process: You rake these hot embers underneath the adjustable-height braai grid. It provides that classic, smoky, bushveld-style flavor locals love.
• Flexibility: You can keep adding wood to the ember maker throughout the cooking process for a steady supply of heat and flavor

The Gas Side (Gas Grill)

• The Setup: This is a drop-in or slide-in stainless steel gas griller, generally featuring 2 to 5 cast-iron burners (depending on the braai box width) and flame-tamer vaporizer plates.
• Cooking Process: It lights instantly with electronic ignition, giving you precise, immediate heat control. You use it exactly like a modern BBQ to sear steaks.
• Convenience: It requires no fire-starting or ash cleaning, making it ideal for quick midweek meals or brunches. It also produces far less smoke than wood.
